For this new trattoria, our very first address in West London, we have unearthed little-known Italian products, which clearly deserve fame. We turn on the spotlight and we explain to you: we went to grab one of the peaks of the Apennines mountain range, overlooking the Parma valley, the most beautiful Culatello di Zibello PDO matured and sourced with love by Mattia Zambroni . On the Sicilian coast, it is the red prawns called Gambero rosso that we unearthed. We also got our hands on the precious black pearls of Veneto known as Transmontanus caviar , to be enjoyed on pizzas and the big gnocco fritto from Emilia-Romagna, from the bomb.
Chef Manuel, the Neapolitan maestro, didn't hold back with the secondi, the Lobster Risotto ai Frutti di Mari, the delicately breaded Gran Cotoletta Alla Milanese , and a selection of meats grilled to perfection on our competitive Basque grill.
